This coffee is harvested in the northern part of Colombia, in Santa Barbara. It is decaffeinated using a 100% chemical-free method, the Swiss water process.
In this method, the green coffee beans are submerged in filtered, heated water. This extracts all of the solubles from the beans. Then, filters separate the caffeine from the other solubles. The coffee beans are placed in an immersion tank with this caffeine-free solution, allowing them to reabsorb much of the flavor and aroma of the bean.
