This coffee is produced by Asorcafé, an association of coffee farmers in southwestern Colombia. Slowly but surely, the association began focusing on helping their growers with agronomic and technical assistance, storage, and most importantly, quality control at their lab. This region has perfect climate conditions for high quality coffee. Each grower is dedicated to producing specialty coffee, and to do whatever they can during fermentation and drying to produce exceptional cup quality. Asorcafé and the growers recognize that quality is the only way to reach economic sustainability.
These Colombian beans are grown at roughly 1700m between October and January; then, they are washed and dried mechanically, as well as in the sun.
