Coopetarrazu has separated one of its multiple farms for the ‘Cereza Roja’ project. None of the coffee cherries are picked unless they are 100% ripe.
Ricardo, manager of the mill and sales, along with Fabien, his right hand man, trust their producers and workers fully to follow the methods meticulously. The workers inspect the cherries, then the coffee goes through the wet milling process. The employees follow the coffee through every step of the process, from when the cherries are accepted at the mill to the dry milling process and through the resting stage.
