Description
Decaf Mexico Esmeralda EA Natural Process is decaffeinated using Ethyl Acetate (EA). In this method, the green beans are steamed to remove the skin and moistened with warm water to expand them for caffeine extraction. The expanded beans are then soaked in EA, a naturally occurring organic compound. The decaffeinated coffee is then removed from the EA solvent, dissolved, rinsed thoroughly, and re-dried.
Ethyl acetate is a natural byproduct of fermented sugar cane, which helps to preserve flavor over any other decaffeinating method. It is a polar molecule, making it and ideal solvent for capturing the polar caffeine molecules. The caffeine molecules bond to the EA molecules and migrate through the coffees cell membranes. In addition to rendering better taste, EA method is very environmentally friendly. Not only does it employ less water, but the materials are readily available and require less fossil fuels for transportation.
